A simple expo example that contains the implementation of the client and the signaling server

Thanks for the contribution.
Can't say i'm too keen on the way you're doing things with hooks but if it works, that is what counts.
Will merge soon.

Can you also provide screenshots?

No problem
I used the hook to separate WebRTC logic from the rest of the UI and navigation logic. Just to make it easy to read and reuse.
I'll add some screenshots and put them on the readme.
